Light and Lemon-y Pasta

Night before last I was (strangely) craving pasta.  Usually, pasta is not my thing.  I'm not sure why, but I just don't really crave it...maybe it's because I usually find it to be too heavy and unsatisfying.  More times than not, I end up making it for Bo, and throwing together something else completely for myself.

Not two night ago.

Surprisingly, I actually wanted pasta, AND I wanted the last of our summer tomatoes.  So, I threw together a light and lemon-y pasta dish that satisfied all of my cravings.  The result was colorful, nutritionally balanced, and - most importantly - delicious!


Light and Lemon-y Pasta
Serves 2

2 campari tomatoes, diced
2 handfuls of spinach, torn
zest of 1 lemon
1 1/2C uncooked pasta
1/2 lemon (squeezed to remove juice)
1/2T EVOO
1/4C Parmesan
salt and pepper, to taste
1/2 avocado, diced

Directions:
  • Add the diced tomatoes, torn spinach, and lemon zest to a large mixing bowl.
  • Cook the pasta according to package directions.
  • While the pasta is cooking, whisk together the lemon juice and EVOO.
  • Once the pasta is cooked, drain it and then immediately add it to the tomato/spinach/lemon zest mixture.  Toss together.
  • Add the Parmesan cheese, and then pour the lemon juice and EVOO dressing on top.
  • Toss to incorporate and melt the cheese.
  • Season with salt and pepper to taste.
  • Garnish with avocado chunks, and serve quickly (before the avocado turn brown).

You can always count on Lola to be close by whenever food is involved...surprisingly, she loves ALL food (i.e. not just meat and peanut butter).  Even if I am cooking a vegan/vegetarian dish, she is directly under-foot and intently interested (and hopeful that I might drop a mouthful - or two)!


I captured the perfect lighting in the picture below (probably my favorite out of the bunch).  You can really see all of the dish's colors in this one:
  • red from the tomatoes;
  • green from the spinach and avocado;
  • brown from the pasta;
  • yellow from the lemon zest; and
  • flecks of white from the Parmesan cheese.  

Hmm...hmmm...good!

(That was last Thanksgiving...less than a year ago!)

Now it is just above my shoulders, and I can almost pull it into a full ponytail.  


For now, I am just going to keep letting it grow.  I don't really have any specific length in mind...as long as it continues to look healthy and shiny then I will just keep letting it get longer.  Who knows, maybe one day it will get this long...

Lemon Honey Stone Fruit Salad

Sadly, the last of this year's blueberries, strawberries, and raspberries have come and gone.  That means another year of waiting until they are fresh and in season again.

BUMMER.

Thankfully, just as berries go out of style season, stone fruits come in!  So what - exactly - are stone fruits?!  Well:
  • peaches, nectarines, apricots, mangoes, avocados (yes, it's a fruit - not a vegetable!)and plums are characterized as "stone fruits;"
  • so-called because of the stone-like seed inside, these fruits ripen in late summer and early fall; and
  • among other benefits, stone fruits:
    • create collagen;
    • care for your nerves and muscles;
    • sharpen eyesight;
    • strengthen bones; and
    • aid in digestion (Source).

Pretty good report card eh?!


Since I love both peaches and nectarines, I was pleasantly surprised to find out that both fruits boast up to five times more antioxidants than previously thought (that's because some of them are "unlocked" during the digestive process)AND - perhaps even more exciting - stone fruits are known for curbing appetite and providing a sense of fullness.

Sounds like the perfect snack to me!


The lemon-honey dressing for the salad is out. of. this. world. delicious!  I could have drank a glass full of it...yes - it was that good.

Lemon Honey Stone Fruit Salad
Serves 2-3

1 medium peach, washed and diced into bite-size pieces
1 medium nectarine, washed and diced into bite-size pieces
1 medium-to-large plum, washed and diced into bite-size pieces
zest of one lemon
juice of half a lemon
2T (scant) honey

Directions:
  • Place the peach, nectarine, and plum in a medium mixing bowl.
  • Zest the lemon on top of the fruit.
  • Add the lemon juice and honey to the fruit.
  • Toss to incorporate.
  • Transfer to a small bowl and refrigerate for at least 30 minutes (or up to two hours).
  • Serve chilled.

As a sidenote, I am LOVING the natural light in these photos.  Note to self:  make more recipes in the middle of the day so that I can take pictures of them in the sunlight!

Deluxe Banana Split Soft-Serve

Last night I was craving - of all things - a banana split from Dairy Queen.  I don't know about you, but I have wonderful memories of heading to Dairy Queen after school, or on the weekends, or with my mom, for a special ice cream treat.  Sometimes I ordered a Chocolate Dip Cone, other times I ordered a Peanut Buster Parfait (come on...you know you remember it!), every once in a while I would order an Oreo Blizzard; but undoubtedly - at least eight times out of ten - I ordered a Banana Split!  There was just something about the combination of vanilla soft-serve, strawberries, cherries, peanuts, and chocolate syrup that made my taste buds go crazy!

And although Bo and I didn't head out to a Dairy Queen last night, YOU BETTER BELIEVE I got my banana split fix!


To start, I used my recipe for Homemade Peach Compote to create a delicious - but healthy - strawberry sauce.  I honestly think that I could have eaten this straight out of the jar with a spoon and been pretty happy!


Then the real work fun began!  I:
  • whipped together a decadent chocolate sauce;
  • chopped some salted peanuts; and
  • got out all of the ingredients for my favorite Secret Ingredient Soft-Serve.  

After preparing all of the separate components of the Banana Split, it was time to assemble my delectable masterpiece.

Seriously...doesn't that look SO good?!


Deluxe Banana Split Soft-Serve
Serves 2

For the Strawberry Compote:
15 strawberries, diced
1/2T cornstarch
2 packets stevia
2T maple syrup
2T water

For the Chocolate Syrup:
2T dark chocolate chips
1/2tsp coconut oil

For the Banana Soft-Serve:
2 frozen bananas
2T almond milk (or milk of choice)
1/2 tsp vanilla extract

For Garnish:
salted peanuts, chopped
maraschino cherry, optional

Directions:
  • For the Strawberry Compote: Toss the diced strawberries with the cornstarch to coat.  Place the strawberries, stevia, maple syrup, and water in a small saucepan; bring to a boil.  Reduce heat to medium; continue cooking at a low boil for 5 minutes.  Use a potato masher to mash the strawberries (until a jam-like consistency is formed).  Pour into a small jar and refrigerate until cooled and set.
  • For the Chocolate Syrup: Place the chocolate chips and coconut oil in a small bowl.  Heat - in 30 second increments - in the microwave until fully melted and incorporated.  Keep warm until ready to serve.
  • For the Banana Soft-Serve: Place the frozen banana chunks in your food processor; process for 1-2 minutes until bananas are broken up and beginning to smooth out.  Add the almond milk and vanilla extract and process until smooth.
  • Next, spoon 2-4T (depending upon taste and preference) of the Strawberry Compote into the food processor with the Banana Soft-Serve.  Pulse a couple of times until the compote is swirled into the soft-serve.
    • Note: At this point - depending upon whether or not your soft-serve is beginning to get too soft - you may need to freeze it for 5-10 minutes to re-harden.
  • Pour the soft-serve into small bowls, drizzle the chocolate syrup on top, and garnish with the chopped peanuts and cherry.
  • Enjoy IMMEDIATELY as the soft-serve will melt quickly!


I was even nice enough to make one for Bo too!  

Go ahead - admit it - I have that "Wife of the Year" award in the bag. ;)

Beta-Caroteine and Protein-Packed Salad

Today, as I was walking on the treadmill and reading the latest Yoga Journal magazine (yes, I read while I walk...I find it very meditative and relaxing), I was struck with inspiration for tonight's dinner.  Specifically, something Lavinia Spalding said in her article "Salad Days" really got me thinking:
When dinnertime comes, salad is often overlooked as a main-course option - it's a nice sidekick, but seldom the star.
Well, not in the Behne household!  The star of tonight's dinner was 110% salad; but not just any salad, this salad was filled with beta-caroteine, fiber, healthy fats, and protein.

Protein, you say?

How does someone who doesn't eat meat get protein?

Why, lentil's of course! :)

Don't trust my nutrition knowledge?  Well, not to worry, the World's Healthiest Foods has my back!
Lentils are a very good source of cholesterol-lowering fiber..but this is far from all lentils have to offer.  Lentils also provide good to excellent amounts of six important minerals, two B-vitamins, and protein - all with virtually no fat.  The calorie cost of all this nutrition?  Just 230 calories for a while cup of cooked lentils! This salad is packed with an abundance of vitamins, nutrients, and good-for-you flavor!  After eating a plate FULL of it, I was satisfied and full, but by no means overly stuffed.  Three hours later, I was still feeling energized!  Don't be shy about the herbs in this salad, they really take the flavors from moderate to delectable!  And just in case you aren't a fan of rosemary or dill, feel free to substitute them with coriander, oregano, or basil.

Before eating this salad, Bo was CERTAIN that he didn't like lentils.  When I told him what was in tonight's dinner salad, he said "Lentils?!!!"  But - and I promise you I'm not lying here - after the first bite he changed his tune!

Lentils may seem like the red-headed-freckled-step-child of vegetables, but honestly, what do you have to lose by giving them a fair try?!


Beta-Caroteine and Protein-Packed Salad
Serves 2-4 (two as an entree, four as a side dish)

1/2C lentils, washed
1C water
2 medium sweet potatoes, diced into bite-size pieces
4 medium carrots, diced into bite-size pieces
2C spinach, washed and patted dry
4T EVOO, divided
1/2T dried dill, divided in half
1tsp dried thyme, divided in half
1T dried rosemary, divided in half
1T lemonjuice
salt and pepper, to taste

Directions:
  • Preheat the oven to 425 degrees.
  • Place the lentils and water into a small saucepan.
  • Once the lentils reach a low boil, reduce the heat and simmer for 15-20 minutes - or until tender.
  • Meanwhile, toss the diced sweet potatoes and carrots with 2T EVOO, 1/4T dried dill, 1/2 tsp dried thyme, 1/2T dried rosemary, and salt and pepper to taste.
  • Roast for 20 minutes.
  • After the lentils, sweet potatoes, and carrots are cooked, toss them together in a large salad bowl.
  • Cover the vegetables with aluminum foil, and refrigerate until they are cool.
  • In a small jar or bowl, whisk together the lemonjuice, remaining oil, and a pinch of salt.
  • Once the vegetables are cool, add the spinach, lemonjuice/oil mixture, and remaining herbs to the large salad bowl.
  • Toss to incorporate, and refrigerate for an additional 30 to allow the flavors to meld together.
  • Serve chilled.


Up next - Who knows?!  I recently realized that I get a little stressed out by this point in the post.  Although it is 100% self-imposed, I have started to feel some pressure to always have another post lined up, when the truth is, I frequently don't!  So, instead of telling you what I am going to write about next time, I have decided to live in the moment instead, and wait for something to strike me! :)

Summer Picnic With My Love

Even though Bo and I are married, live in the same house, sleep in the same bed, and see each other (almost) every day, sometimes we forget that "date nights" (or, in this case, "date afternoons") are still important.  And since, by some miracle, we both had today completely off from work, we decided to go on a picnic!

This morning, I spent an hour or so whipping up a special lunch; and I must admit that I felt like a regular Giada de Laurentis in the kitchen! :)  By 12:30 we were both starving and ready to hit the road!

Thankfully, we didn't have to travel far.  Less than a mile away is a local park; and since dogs are allowed, we decided to bring Lola along for the ride!  She has gotten SO BIG (over 50 pounds!) that now she has to ride in the back seat.  No more floor board of the passenger side for this little Labrador!


While Bo walked Lola around for a couple of minutes, I took my time setting the stage for our picnic date.  I brought an old family quilt along to decorate the table, and then I spread out our feast:


Since Bo wanted a little more protein with his lunch, I added some ham to his sandwich.  In the end, he actually said that he thought the sandwich was a little better without the meat.  SCORE for the vegetarians!


I guzzled my lunch down with Virgil's Zero Cream Soda, while Bo sipped on Steaz Zero Calorie Orange.  Both were delicious; but truth be told, my cream soda was the best out of the two.  It really tasted like the real thing!

This fruit salad was simple and out-of-this-world delicious!  It was - in both of our opinions - the best part of the whole picnic.  And since I know you want it, here is the quick and easy recipe:

Minted Fruit Salad
Serves 2

8 medium strawberries, diced
1/2 C blueberries
1 medium nectarine, diced
1 packet of stevia
1/2T lemonjuice
1/2 tsp dried mint

Directions:
  1. Add the strawberries, blueberries, and nectarine to a small mixing bowl.
  2. Sprinkle the stevia, lemonjuice, and mint over top.
  3. Toss to incorporate.
  4. Chill until ready to serve.

It really is as easy as 1-2-3-4!

This macaroni pasta salad wasn't my recipe, and it wasn't a home-run.  Truthfully, it was just so-so.  Next time, I think I would do better to just come up with something of my own.  Regardless, it did hit the spot when Bo and I were still a little hungry after eating our sandwiches (Bo has a full sandwich, I just had a half)

Afterwards, we took a little walk to help digest our food.  Since it was VERY hot, we tried to stay in the shade as much as possible.  We watched Lola carefully to make sure she didn't overheat, and we also gave her lot and LOTS of water.

At one point, we even talked Lola into playing on the playground!


She and her Daddy even went down the slide!  
(I'm not sure she enjoyed it.)


We didn't get a picture of it, but Lola thought the swings were so. much. fun.  While I was swinging, she kept trying to jump up and catch me!  It was too funny to watch her.  On the one hand she was totally confused by what was going on; while on the other hand she thought it was this new game that she couldn't wait to play. I can't wait to see what Lola will be like when we bring our future children to the playground.

It is certainly something to look forward to...

Next up:  a creative way to use up all of the zucchini that is abounding in your garden/local grocery store!  Delicious AND healthy potato filling anyone?!

Banana Melon Smoothie

Everybody knows that breakfast is my favorite meal of the day.  I mean, honestly, the proof is in the pudding, right?!  I have more breakfast recipes on my blog (thus far) than any other type of recipe.  Granted, most of these recipes include oats; but what can I say?  I LOVE oatmeal.

But today's post has NOTHING to do with oatmeal.

Nope, there isn't an oat in sight.  

You see, yesterday morning I was craving something different for breakfast.  By 7:30AM it was already H.O.T. outside (over 95 degrees, with the heat index!).  Needless to say, I wasn't in the mood for my regular hot tea or hot chai.  Instead, I had an overwhelming craving for a smoothie.

But not just any smoothie...

...I wanted to incorporate the sweet, juicy, freshness of melon!

Sweet and bursting with flavor, this smoothie is the perfect way to start a summer morning off with a BANG!  The frozen banana makes it creamy, the flax gives it staying power (along with fiber, antioxidants, and healthy omega-3's), and the melon simply makes it delicious.  Feel free to use cantaloupe, honeydew, or any type of specialty melon.

Banana Melon Smoothie
Serves 2

1 large banana, broken into pieces and frozen
1 heaping C of melon (I used cantaloupe)
2T ground flax
1/4C orange juice
1/4C Unsweetened Vanilla Almond Milk

Directions:
  • Add the banana, melon, flax, orange juice, and almond milk to your blender.
  • Blend on the lowest speed first, and then gradually increase the speed.
  • Continue blending for 1-2 minutes until thoroughly smooth.
  • Serve chilled, as a snack, or alongside your breakfast of choice!


I decided to add flax meal to the smoothie for a number of reasons, but primary because flax contains significant amounts of fiber, antioxidants, and omega-3 fatty acids.  It is also high in B vitamins, which is important for someone like me who doesn't receive those vitamins from animal protein.  If you want to learn more about the benefits of adding a tablespoon of flax to your morning smoothie, oatmeal, etc., just read here.

Chocolate-Covered Katie's Cookie Dough Dip

Sorry to be a little MIA this week.  The studio that I run - Yoga Life - is right near the tail-end of a total website overall.  As such, I have been very busy collaborating with the web designer, creating web content, and learning the strange computer programming based language of HTML.

Needless to say, my brain has been a little bit drained fried the past few days!

Thankfully, Bo and I are heading over to a friend's house tonight for an "Olympic Opening Ceremony" party.  The hosts will be grilling hamburgers and hot dogs, while the guests have all been asked to bring a dip.

Now, being the New Mexican resident that I am (Yes, even though we move all the time we are still NM residents!), when you say "dip" the first few things that pop into my mind are guacamole, bean dip, and salsa.  Unfortunately, both guacamole and bean dip had already been claimed by other party-goers.  And since I figured salsa might be a little overkill, I decided to check out a few of my other favorite bloggers to see what ideas that might have.

Enter: Chocolate-Covered Katie to the rescue!


After reviewing several of Katie's recipes, I quickly decided upon her "Healthy Cookie Dough Dip."  Truth be told, I figured that any recipe that has over 1,000 comments must be delicious...not to mention, reader (and eater) approved!

It took be less than 5 minutes to whip this dip together, and I would be lying if I said I haven't been dipping my greedy little fingers in it all afternoon long.  I am going to pick up some graham crackers to go along with it.  I think the crunch of the crackers and the creaminess of the dip will work great together!


Now, I'm off to teach an "All Levels Flow" class at Yoga Life, and then over to the friends' house to kick off the summer Olympics!

Next time - a smoothie recipe that is refreshing and cool for those hot and humid summer days!

A Few of My Favorite (Summer) Things: Part II

As I suspected in this post, as the summer has progressed I have thought of more "favorite things" to share with you here on the ABC blog.  Just remember:

When the dog bites

(2) Watching Lola grow


By this time next year, Lola will be fully grown...which, if I'm completely honest with myself, makes me sort of sad.  :(

For now (at least), she is still growing; and it is exactly for that reason that I have added her to my list of summer favorites.  At just a couple of days over six months old, she weighs in at 49.7 pounds(!), and is more energetic and fun than ever.  Now that she is fully poddy-trained, crate-trained, and house-broken, Bo and I feel like we can really enjoy her.  She has such a loving and silly personality, and she makes us laugh out loud several times a day.

We hit the jackpot with Lola...she is truly one of a kind.

(3) Holidays, Parties, and Friends!

As you might remember, we had a HUGE party at our house on July 4th!  But it's not only on July 4th that we get together to cookout, relax, and have some fun in the sun!  NO - our group of friends gets together at least twice a month to eat, drink, be merry, and enjoy the summer months!

Needless to say, we are very blessed in the friends department!

(5) The Sights and Sounds of Childhood

Here in Orange Park, FL, we live one block away from a middle school, in a very family-oriented and child-friendly neighborhood.  As a result, while school is out during the summer, children are constantly riding their bikes in the streets, playing basketball in their driveways, and walking to and from the local stores.

I don't know about you, but seeing children laughing and playing together during summer break reminds me of all the laughter and fun that I enjoyed in my own childhood.  As an adult, I may still be working my normal hours throughout June, July, and August, but something about the smile on my 10 year-old neighbors face as she rides her bike with "no hands" brings a little a LOT of joy into my day!

Dill Potato and Pea Salad

As I mentioned at the end of my last post, Bo and I spent our Saturday afternoon (and early evening) at an a pool party!  The host asked me to bring something that I could eat, since hamburgers, hot dogs, and their respective fixings were to be the main course.  Consequently, I decided to bring something filling (so that I wouldn't be stuck eating watermelon and chips the whole afternoon), but also crowd-pleasing.

Enter: potato salad.

Before I go on, I feel like I need to acknowledge that - YES - I am aware that I have already posted two potato salad recipes on this blog; and - NO - I am not addicted to this summer picnic favorite (OK, maybe just a little bit, but it's nothing to worry about!).  It just so happens that:

  • potatoes are delicious;
  • almost everybody loves them; and
  • there are practically endless ways to dress it up in a salad! 
If you're like me, and you love the taste of dill, then this is the potato salad for you!  Baby new potatoes really make this salad something special; but if you don't have them on hand, Russet or Idaho would work in a pinch.  The peas give it a sweet crunch, and the dill brightens everything up!  Kid-tested and mother-approved Meat-eater tested and vegan approved, this salad will leave everyone satisfied!

Dill Potato and Pea Salad
Serves 6-8

8 medium (red) New Potatoes, cubed, boiled, and drained
can of green peas, drained and rinsed (or frozen)
4 scallions, diced
1/4C veganaise (or mayonnaise)
1/2T apple cider vinegar
1/2T lemonjuice
1T water
1 tsp dried dill weed
3/4 tsp salt
1/2 tsp pepper

Directions:
  • While the cubed potatoes are boiling, place the peas and scallions into a large salad bowl.
  • Meanwhile, whisk together the veganaise, apple cider vinegar, lemonjuice, water, dried dill week, salt, and pepper until it reaches a smooth consistency.
  • Once the potatoes are fork-tender, drain them.
  • Toss the potatoes into the salad bowl with the peas and scallions.
  • Pour over the dressing,
  • Toss to coat.
  • Refrigerate until cool.
  • Serve alongside your favorite summer "fixins"!

Summer Vegetable Soup

ANNOUNCEMENT: Today I am a "Guest Blogger" over at Nutrition in a peanut shell!  Katie writes an awesome blog, and while she is on vacation she invited me to keep her readers company.  I am super duper honored to be filling Katie's shoes for the day.  So go ahead, click on over and see what I had to share?!
As much as I love to roast vegetables, sometimes I like a little "change of pace."  Even though the Florida temperatures have been scorching for the past few days weeks months,  last night I was actually craving - of all things - soup.

So, I decided to do a little bit of research on some of my favorite blogs and ended up settling on Ashley's recipe for "Very Veggie Soup."  Quite the creative maven in the kitchen, Ashley also comes up with budget-friendly recipes that use ingredients that almost everyone has lying around in their kitchen (i.e. no fancy coconut flours, rice syrups, and xantham gums there!).  With that said, I did make a few alterations to Ashley's recipe.

Specifically:
  • instead of 75oz. of broth, I used 6 cups (we prefer a chunkier soups);
  • in place of the broccoli and mushrooms I used cauliflower and zucchini (those were the vegetables I had on hand);
  • I reduced the oil to 1T;
  • I added several herbs including parsley, oregano, and salt and pepper (In my opinion, the more herbs the merrier!);
  • I added 1/2 package of whole wheat fettuccine noodles; and
  • I didn't add any additional protein (I didn't have anything on hand that would have worked very well).

It might seem a bit strange to you, but Bo and I enjoyed eating this soup chilled, with a large salad on the side.  Filled with vegetables, noodles, and herb-enriched flavor, this soup is summer in a bowl!  For extra protein, feel free to add diced chicken, sausage, quinoa, or garbanzo beans.

Summer Vegetable Soup
Serves 4

6 C vegetable broth
2 carrots, peeled and diced
2 ribs of celery, diced
1 onion, chopped
1/2 head of cauliflower, chopped
2 zucchini, chopped
1/2 package whole wheat fettuccine
1T EVOO
1/4C low-sodium soy sauce
1T honey
1 tsp paprika
1 tsp dried parsley
1/8 tsp dried oregano
1/2 tsp salt
1/2 tsp pepper

Directions:
  • Bring the broth to a low boil.
  • Add the carrots, celery, onion, cauliflower, and zucchini.
  • Cook for five minutes.
  • Add the EVOO, soy sauce, honey, paprika, parsley, oregano, salt, and pepper.
  • Simmer for 30 minutes.
  • Add the noodles and cook for an additional 5-7 minutes.
  • Serve warm, or chilled, accordingly to preference.
